Late last year, the Nigeria Youth Service Corps decided to send me to the Northern part of the country, Zamfara State to serve my country. Getting to the north, I decided to look a little bit into their culture and this is their first meal that I learnt (Tuwo Shinkafa). Tuwo Shinkafa is a northern Nigerian fufu recipe that is prepared with the soft rice variety. It is usually served with Northern Nigerian soups: Miyan Kuka, Miyan Taushe etc.

Gbegiri soup This soup has such a great and outstanding aroma and taste, the colour will attract and have you asking for more, this soup needs just a little ingredients and you are set, popular with the yoruba tribe gbegiri is also enjoyed among other natives of Nigeria, Hausa people for example enjoy this soup with tuwon shinkafa. Tuwo shinkafa (Tuwon shinkafa) is a rice meal, popular in the northern parts of Nigeria. It is usually served as an accompaniment for soups and stews and is quite easy to prepare.

Instructions to make Tuwon shinkafa and gbegiri soup:
  1. To make Tuwon, wash the rice (it has its own special rice used to make swallow, but if one wants to make use of the normal rice it takes time to soften)well and put on fire with plenty water till very soft, (to check if its ready, it can be stirred with turning stick once in a while)then gradually add semovita while stirring remove from fire, stir till firm and serve.
  2. For the soup, wash beans to remove skin put on fire add potash to soften and dissolve the beans (there should be know whole beans left) put on fire and cut kpomo and pour in.
  3. Grind pepper and crayfish and add, add Palm oil, Seasoning, Salt, okpeye and wash smoked fish and add allow to boil (it shouldn't be too thick cus it will still thicken on its own when placed to cool).
  4. Remove from heat and serve with prepared Tuwon shinkafa.

These are two substances that promote the quality and function of the grey matter in your brain. It’s true: consuming a tuna fish sandwich can greatly boost your mood.

Some grains are really excellent for driving away bad moods. Barley, quinoa, millet, teff, etc are all great for helping you feel better. These foods fill you up better and that can help elevate your moods also. It’s not difficult to feel low when you are starving! These grains can elevate your mood since it’s not at all hard for your body to digest them. You digest these grains more quickly than other foods which can help promote your blood sugar levels, which, in turn, helps make you feel more pleasant, mood wise.

Green tea is fantastic for moods. You were simply waiting to read that here, weren’t you? Green tea is rich in an amino acid called L-theanine. Studies have found that this particular amino acid can basically stimulate brain waves. This helps improve your mental acuity while having a relaxing effect on the rest of your body. You probably already knew it is not hard to get healthy when you consume green tea. Now you know that applies to your mood as well!
