Instructions to make Sautéed Garlic Shoots:
  1. Cut the garlic shoots into 4 cm lengths, the bacon to 1.5 cm strips, and shred the mushrooms into bite-sized pieces.
  2. Blend together the soy sauce and sake, then dissolve the katakuriko in water.
  3. Heat sesame oil in a pan, sauté the bacon and garlic shoots until aromatic, then add the mushrooms.
  4. When the mushrooms become tender, add the soy sauce and sake, and sauté on high heat.
  5. When the ingredients are well coated, add the katakuriko dissolved in water to thicken, then serve.

Chop garlic scapes into little coins and add to stir-fries and fried rice. Dress vegetables with sautéed garlic, if desired. Once the garlic is cooked, turn off the heat and take the pan off of the burner. The garlic should be slightly translucent and have a light golden color. Pour the sautéed garlic over vegetables like spinach, cauliflower, asparagus, green beans, cabbage, or your favorite vegetables.
