The cake itself is soft, fluffy, and moist and the frosting is creamy coconut buttercream!

  2. In a small bowl, mix together the flour, baking powder, salt and set aside.
  3. In the bowl of your electric mixer (or with a hand mixer), beat together the  butter, sugar and coconut oil until light and fluffy. Add the eggs one at a time, vanilla extract and continue to mix until all the ingredients are well incorporated.
  4. Pour the buttermilk and beat until combined. Slowly add the dry ingredients and mix it all together until it’s incorporated. Gently fold in the shredded coconut.
  5. Pour the batter into the prepared pan and bake until a toothpick inserted in the middle comes out clean, for about 45 minutes.  Allow the cake to cool completely before frosting.
  6. For the frosting, in the bowl of an electric mixer fitted with a paddle attachment, beat cream cheese, butter and vanilla extract until well blended. Slowly add powered sugar and continue to mix until smooth.

The only basic changes I made were to use a fork instead of a straw to poke the holes pour the cream/cond milk mixture while the cake is still hot and I made fresh whipped cream. It's fluffy and sweet, and partners with the cake texture in a gorgeous way. Cake dreams are happening today, lads.

How to Improve Your Mood with Food

A lot of us think that comfort foods are bad for us and that we need to avoid them. Sometimes, if the comfort food is a high sugar food or another junk food, this is very true. Other times, though, comfort foods can be totally nourishing and it’s good for you to consume them. There are several foods that, when you consume them, could boost your mood. If you are feeling a little bit down and you need an emotional pick me up, try some of these.

Eggs, believe it or not, are great for helping you battle depression. You must be sure, though, that what you make includes the egg yolk. Every time you would like to cheer yourself up, the yolk is the most crucial part of the egg. Eggs, the egg yolk especially, are high in B vitamins. The B vitamin family can be fantastic for lifting up your mood. This is because they improve the function of your brain’s neural transmitters (the parts of the brain that dictate how you feel). Eat an egg and cheer up!

Put together a trail mixout of a variety of seeds and nuts. Peanuts, cashews, sunflower seeds, almonds, pumpkin seeds, etc are all terrific for helping to boost your mood. This is because seeds and nuts have plenty of magnesium which raises your brain’s serotonin levels. Serotonin is the “feel good” natural substance that directs your brain how you feel all the time. The higher your levels of serotonin, the happier you are going to feel. Not only that but nuts, in particular, are a great source of protein.

If you wish to defeat depression, you should eat some cold water fish. Salmon, herring, tuna fish, mackerel, trout, etc, they’re all loaded with omega-3 and DHA. DHA and omega-3s are two things that improve the quality and the function of your brain’s gray matter. It’s true: consuming a tuna fish sandwich can really help you fight depression.

Grains can be good for fighting a bad mood. Barley, quinoa, millet, teff, etc are all excellent for helping you feel better. They help you feel full as well which can really help to better your mood. Feeling famished can be awful! The reason these grains are so good for your mood is that they are not hard for your stomach to digest. You digest these foods more quickly than other foods which can help increase your blood sugar levels, which, in turn, helps make you feel happier, mood wise.

Your mood can really be helped by green tea. You were sure it had to be mentioned in this article, right? Green tea is rich in an amino acid known as L-theanine. Research has proved that this amino acid promotes the production of brain waves. This will improve your brain’s concentration while simultaneously relaxing the rest of your body. You knew green tea could help you be better. And now you know it can help raise your mood as well!

As you can see, you don’t need to consume all that junk food when you are wanting to feel better! Try these hints instead!
